Mulato Chiles are a mild Mexican pepper (500–2,500 SHU) with a sweet, rich flavor and dark brown color. Alongside ancho and pasilla, they form the backbone of traditional dishes like mole, soups, and chili.
With very low heat, Mulatos can be used generously to add depth without overwhelming spice.
They can also be rehydrated, stuffed, and pan-fried, adding depth and complexity to a wide range of dishes.
