Ancho Chiles (AHN-cho) are mild, dried peppers that measure 500–1,500 Scoville Heat Units (SHU). When fresh, they are known as Poblano chiles, native to the Mexican state of Puebla. Once dried, they take the name ancho, meaning “wide chile” in Spanish.
These heart-shaped peppers typically measure about 3″ wide and 4″ long, tapering to a gentle point. Their skin is deep reddish-brown to nearly black, with a wrinkled texture. A top-quality ancho should be clean, pliable, untorn, and richly aromatic, often carrying a fragrance reminiscent of dried fruit, particularly prunes.
Ancho chiles are the most widely used dried chile in Mexican cuisine. They are an essential ingredient in sauces, salsas, and especially mole, where they form part of the celebrated “holy trinity” of Mexican chiles, alongside Pasilla Negro and Guajillo.
Flavor profile: Mild heat, fruity, earthy, with subtle raisin-like sweetness.
